Apple & Cranberry Baked Muesli

Simple and easy breakfast bake featuring an Organic Apple & Cranberry Muesli mix. Perfect breakfast dish for sharing with family or friends.

Serves: 4-6

Time: 50 minutes

Ingredients: 

2 tsp organic coconut oil, melted
2 cups Organic Apple & Cranberry Muesli
1 tsp baking powder
1 tsp organic cinnamon
1 tsp vanilla powder
Pinch of salt
1 free range egg
2 cups organic almond milk
2 apples, chopped
1-2 Tbsp organic pepitas

Method:

  1. Preheat oven to 190ÂșC.
  2. Brush a baking dish with melted coconut oil.
  3. In a bowl, mix together the muesli, cinnamon, baking powder, vanilla and a pinch of salt.
  4. Whisk the egg in a separate bowl, then blend in the almond milk.
  5. Cover the bottom of the greased baking dish with the chopped apple, then lay the muesli mixture over the top.
  6. Gently pour the egg/milk mixture evenly over the muesli.
  7. Bake in the oven for 35-40 minutes until golden and firm.
  8. Sprinkle over with pepitas and serve.
