How to Eat More and Waste Less - Easy Ways to Utilize Leftover Produce!


Our favorite produce has so many health benefits and is great to mix into plenty of dishes-- when we’re feeling creative, that is! Unfortunately, fresh produce can often be the most neglected as well, especially when our bodies are craving, well - anything BUT the kale that’s wilting in the bag in the back of the fridge.

A few ways to consume these healthy goodies instead of letting them get tossed in the wastebasket include: 

 

Dream Up a Flavorful Soup

Tossed in with your favorite broth, protein, potatoes, veggies, lentils, and plenty of seasoning, this is an easy way to mask a wilted veggie plus reap all the benefits and vitamins as they mix in with your broth!

 

Freeze for a Smoothie

You can freeze and blend  just about anything, and spinach and friends are no exception. Once frozen, veggies and fruit take on a great icy, whipped texture when blended - and can easily be masked with the flavors of banana, protein powder, fresh fruit, nut butter, or honey! 

 

Wilt spinach on a Pizza

Make a leftovers night easy with some dough, naan bread, or pita by topping with cheese and some spinach leaves for an inspired margherita or supreme pizza! 

 

Baked Kale Chips

Toss in olive oil, garlic seasoning, salt and pepper and spread out on a baking sheet for a crispy, tasty, salty snack - you’ll hardly know it’s kale! 

 

Tasty Breads + Muffins

Soft apples, bananas, and YES, even zucchini, make for amazingly delicious, and healthy, baked goods! Whisked together with simple household ingredients such as flour (coconut, almond, whole wheat, or gluten free), eggs (or, alternatively, flax egg for a plant-based option), maple syrup or honey, optional nuts, and plenty of cinnamon result in a scrumptious and nutritious comfort food with no precious produce wasted! 

 

Stir Fry or Pasta Bake

When seasoned perfectly, sautéed or baked with some fresh garlic and onion, and topped with cheese and pasta-- produce such as roasted tomatoes, zucchini, broccoli, cauliflower, and more can be tossed together easily for a flavorful bake!
